      Welcome to the TTF Recipe Swap!

      Ok, so I have noticed in a lot of the SO threads, people talk about PM-ing recipes to each other often. Why not share them with everyone?? I know there is a short thread already in existence about cooking to relieve stress, but I want this thread to be all about the good stuff: the recipes! So break out those cookbooks and lets swap some of our favorite recipes!

      Suggested rules for this thread:
      --Each post must have a recipe! (So try not to get too off topic!)
      --One recipe per post (to make it less confusing)
      --Only our favorite recipes
      --Maybe we could try rating the recipes: Easy, Medium, Hard.

      OK! This recipe is a must-have for chocolate –lovers out there. You know those days when you just NEED chocolate, but can’t work up the energy to make a batch of brownies or a chocolate chip cookies? Well, no worries. Now, you’re covered! This recipe literally takes 3 minutes total and can be done in the microwave. Plus, it is home-made, so you don’t need to worry about all those nasty preservatives that you would get from a store-bought pre-made dessert. Enjoy!



      Level: EASY!

      One Slice of Chocolate Cake! (Also called “Coffee-cup Cake”)

      2 T. Flour
      2-3 T. Sugar
      2 T. Unsweetened Cocoa
      1 large Egg
      2 T. Milk
      2 T. Vegetable Oil
      2 T. Chocolate Chips
      Small Splash of Vanilla Extract

      Spray a coffee mug with non-stick cooking spray. Add all dry ingredients to a mug and mix well. Add the egg and mix well (if you don’t you will have little egg pieces cooked into your cake). Pour in milk and oil and mix well. Add chocolate chips and vanilla extract and mix again. Put mug into microwave and microwave on high for 2 minutes. Allow cake to cool and tip out on a plate if desired.

      * I like using less chocolate chips, they sink to the bottom of the mug while it is cooking and form a frosting layer
      ** Cake may rise over the top of the mug, but don’t be alarmed! It has never fallen/broken for me!
      ***Really great to share with someone, and serve with ice cream!

      Okay, I had to get in on this one! I have such an easy recipe, but oh so delicious. This is actually one of my H favorites, at least, I think so! It is one of my favorites because it is so EASY! Don't get mad at me though if I end up posting a new favorite on here every week, I love trying new recipes!

      level easy, easy, easy.

      Pepperconi Roast

      One tri tip roast(tastes the best but you can use a chuck roast)
      Jar of sliced pepperconies or whole pepperconies sliced (I always discard the juice but use just a little for a bit more spice)
      1 can beef stock
      2 envelopes of Lipton Onion Soup
      Slow Cooker

      Throw everything into the slow cooker, cook on low for 8 to 10 hours or high for 4 to 5 hours. And done. See easy. I do check the meat towards the end to make sure it doesn't over cook but other than that not much work.

      What fun! Thx for starting this thread, WaterLily!! Well, here goes my contribution...

      Linda’s Southern Italy Chicken

      Degree of difficulty: Easy!

      Ingredients:
      Defrosted boneless skinless chicken breasts, the thinner, the better (if thick, slice in half thickness-wise)
      Use more (2/3) Poultry Worcestershire sauce, enough to cover chicken (recommended: Lea & Perrins Marinade for Chicken)
      Use less (1/3) Original Worcestershire sauce, enough to complete bath (recommended: Lea & Perrins Original)
      6-8 cloves fresh garlic, minced (optional: also add whole cloves)
      2 heaping T. sundried tomatoes (jarred, in olive oil) and a few splashes of the oil from the jar
      12 green olives with pimento, each quartered, and a few splashes of the juice from the jar
      2 heaping T. small capers and a few splashes of the juice from the jar
      Optional:
      Add 2 heaping T. minced jarred garlic and a few splashes of the juice from the jar
      Add 2 heaping T. artichoke mango olive spread (jarred, but hard to find; had to mail order ours from a store in North Carolina)
      Add fresh tomatoes, chopped

      Directions:

      Place all ingredients in gallon-sized Ziploc bag. Adjust measurements accordingly, based upon number of pieces of chicken, and to suit your own taste. In traditional Italian cooking, the less ingredients, the better. With this recipe, the more ingredients, the better! For the record, I am not Italian!!

      MUST MARINADE FOR 2 DAYS in bag in refrigerator, turning frequently, to get the full flavor of all ingredients!

      Pour entire contents of bag into ungreased baking pan, and bake at 350 degrees uncovered for about 1 hour, or at 325 degrees for 1-1/4 to 1-1/2 hours. Meat is done when thermometer measures 165 degrees, or when all parts of meat are white, and no pink juices flow when cut. After placing an individual piece of chicken onto your plate, be sure to spoon cooked marinade and ingredients from pan on top of chicken. This is what really makes it! Enjoy!

      So this recipe has become a favorite summer recipe for my family…it makes a lot, so we often serve it at parties as a side dish. In really hot weather, it makes a great meal by itself (with the beans it is surprisingly filling). Measurements don’t have to be perfect but make sure all the ingredients are added because they complement each other surprisingly well. If we are making it a meal, we often use slightly more beans and less rice. It is very, very fresh tasting, and keeps pretty well for a few days (though if you like it as much as my family, it won’t last that long!).



      Level: Easy (just time consuming)

      Sweet and Tangy Rice Medley

      3 T. vegetable oil
      1 T. apple cider vinegar
      ¼ C. chopped fresh cilantro
      1 lime, zested and juiced
      1 ½ C. chopped mango (about 1 mango)
      ½ C. dried cranberries
      ½ C. diced red onions
      ½ C. diced red peppers
      3 C. cooked rice, cooled
      15 oz. can black beans, drained

      Combine vegetable oil, apple cider vinegar, cilantro, lime juice, and ¼ t. lime zest. Mix remaining ingredients and gently toss with vinegar/lime mix to coat evenly. Enjoy!

      Level - Easy. we used our ownmade BBQ sauce but any good BBQ sauce would do

      North Carolina Pulled Pork BBQ

      3-4 lb pork butt, shoulder or blade roast
      28oz can tomatoes
      ½ c. vinegar
      1 med onion, sliced
      2 tbsp Worcestershire sauce
      1 tbsp sugar
      2 tsp crushed red pepper flakes
      2 tsp salt
      1 tsp black pepper

      Simmer on low for 12 – 18 hours. Pork is done when it falls apart when lifted with a fork. Remove meat-discard bone. Shred meat with forks (or dice). Serve with at least one jar of your favourite bbq sauce. I drained off most of the fluid part of the stewing sauce and mixed the bbq sauce with the more solid part (tomatoes and onion).

      Here's one for you cupcake.

      Level - Easy, Everyone wants this recipe from me.

      Peanut Butter Pie

      1 ¼ Cup Oreo baking crumbs
      ¼ Cup Melted butter
      Press & Bake at 350 for 5 Minutes

      1 Cup Icing Sugar
      4 oz Cream cheese soften
      1/3 cup Crunchy Peanut Butter
      ½ Cup Milk
      Beat until smooth
      Add 1 Large tub whip cream
      Fold and freeze in spring form pan

      Level - Easy


      Chicken Curry

      2 Onions
      2 Tsp curry pasted – Madras by patake is the one we use.
      2 Med. Tomatoes – chopped fine
      1 Can coconut Milk
      Boneless/Skinless chicken thighs - diced
      1 Tbsp fish oil
      1 Tbsp sugar

      In a large skillet cook onions in oil over low heat – until soft
      Stir in tomatoes - Cook mixture for 5 minutes
      Heat coconut milk – stir in curry let simmer until it starts to thicken and add fish oil/sugar and simmer.
      Pre-cook chicken and drain add to onions and tomatoes.
      Stir all ingredients together and simmer while you cook the rice.
      Salt & Pepper and heat until curry very hot – do not boil

      Serve with rice and pita bread.

      Cant get any easier than this

      Rigatoni in Sauce with white chicken

      1- Before Cooking, lift corner of lid to vent-DO NOT FULLY REMOVE LID

      2- Microwave on HIGH for 31/2 minutes

      3- OPEN LID-stir pasta and sauce separately. Re-cover then continue to cook on HIGH for an additional 1-11/2 minutes

      4- Let stand in microwave for 1-2 minutes

      5- Remove Lid (Careful it is hot) Mix contents together and serve


      Sorry, had to do it. Good ole TV diners
