      Crock-Pot Burritos

      This is my new favorite go-to recipe, because you can freeze them and the keep/reheat well! It is super easy, and tastes amazing!

      Level:
      Easy

      3-4 chicken breasts
      1 jar salsa (the chunkier, the better!)
      1 can black beans
      1 bag frozen corn
      Cayenne-to taste

      Place chicken in crock-pot, cover with remaining ingredients. Bake on high for 4 hours or low for 8 hours (or until chicken is cooked). Take chicken out of crock pot and shred. Mix shredded chicken in with the rest of the ingredients.

      Corn/flour tortillas
      Shredded Cheese
      Salsa-to serve
      Sour cream-to serve

      Spoon enough of the chicken mixture from the crock pot into tortillas and roll up. (If you are freezing them, wrap in plastic wrap & tin foil at this step.) Place burritos in a baking dish. Cover with cheese. Bake in 400°F oven until cheese has melted. Serve with salsa & sour cream. Enjoy!

      Buffalo Chicken Dip

      This easy recipe was a hit and my family always requests it. There are never leftovers... Great for sports parties!

      Begin by preheating the oven to 350 degrees.

      Add the first 2 ingredients into a medium/large frying pan and heat until chicken is warm and covered with sauce.
      • 2 or 3 boneless skinless chicken breasts, cooked and shredded
      • 3/4 cup pepper sauce (such as Frank's Red Hot® Wings Sauce)
      Then add into the pan:
      • 2 (8 ounce) packages cream cheese, softened
      • 1 cup of either Ranch dressing or Blue Cheese dressing
      Fold/mix together until well blended with the chicken mixture.

      At this point you can add:
      • 1 cup shredded Cheddar cheese or Pepper Jack cheese
      and save a little to top with but I think it makes the dip too greasy and I prefer to leave it out.

      Transfer to a deep pie dish or casserole dish. Bake at 350 for 25 minutes.
      Serve warm.

      Dippers:
      celery sticks
      carrot sticks
      crackers
      Fritos
      tortilla chips
