Don't miss having a coffee in one of the bars in Montmartre. Visiting Pere Lachaise cemetery (Jim Morrison, Chopin, etc). Notre Dame and the Shakespeare bookshop on the other side of the sq, the onky english language bookshop in Paris, or one of the few. Going to Point des Arts at dusk with a bottle of wine to check out the young hipsters chilling out and the Isle du VertGalant . If you have time the Eifell Tower.
I would recommend getting lost in Paris, wandering without aim, until you have a Satori, like Jacques Kerouac.

You have to stand on the center of Paris. I think its near Notre Dame but I can't remember. The story is that if you stand on the center of Paris, then you will sure to come back some day. Its on the ground and supposedly all roads lead out from that spot.
If you go to Mont Martre, you will see the Sacre Coeur Cathedral. It is beautiful. When I went to Paris in high school, they told us some love story about it, very sad, beautiful and French. I couldn't find it on google, so if you go, see if they still tell the story.
That's all I have. You can find anything in a guidebook really, but this is what really stuck with me.
You should read the Hunchback of Notre Dame before you go, then go to Notre Dame. :) I am jealous!
